Broccoli Brown Rice Pesto Salad

This came together really fast and is so delicious! I cooked the rice fresh, but if you're really time poor (mama's I'm looking at you), just grab a couple of packets of pre-cooked rice!The little sweet goji berries add such a delicious sweet hit and the flavours meld together over time so it's even more flavour packed the next day.Just be sure to leave the avocado out and slice it in fresh if you're taking it for leftovers.  

I used my favourite store bought vegan cashew basil pesto, but feel free to make your own. I've got a great recipe for it HERE: Plant Based Pesto

Ingredients:

  • 2 cups cooked brown rice

  • 1 head brocolli, riced

  • 1 medium avocado, diced

  • 1/4 cup basil pesto

  • 2 Tbps dried goji berries (optional, can use raisins)

  • 2 small lemons, juice of

  • salt to taste

Directions:

  1. Cook rice as per packet instructions. Set aside to cool.

  2. Put broccoli head and stem in food processor and process until broccoli resembles rice.

  3. Once rice is cool, stir through the riced broccoli, diced avocado, goji berries. Add pesto, lemon juice and salt.

  4. Stir well so all salad is coated, then serve.
