Gingerbread Men

'Tis the season and all that!These are really fun to make with the kids but actually taste delicious and use real food ingredients.

Get them to cut the shapes out and decorate their own.  This is actually the first time I've made a recipe using molasses and I have to say it gave it the most awesome taste once cooked.

They came out really crunchy on the outside but soft on the inside. Perfect for dunking in your cuppa!  If you don't have molasses, just use more maple syrup. Feel free to get creative with your decorations also. You can use the icing to act as a 'glue' to stick some pebbles as buttons, go to town! Enjoy guys x  

Ingredients:

  • 1 cup almond meal

  • 1/2 cup tapioca flour

  • 3 Tbsp buckwheat flour

  • 1 tsp cinnamon

  • 1/2 tsp mixed spice

  • 1/2 tsp ground ginger

  • 1/4 tsp nutmeg

  • 1/4 tsp salt

  • 1/4 cup black molasses

  • 3 Tbsp maple syrup

  • 3 Tbsp coconut oil, melted

Directions:

  1. Preheat oven to 150 degrees and line a baking tray.

  2. Place all dry ingredients in a bowl and mix well.

  3. Add wet ingredients and mix until a dough forms.

  4. Place dough between two pieces of baking paper and roll flat. Use cookie cutters to cut cookies and place on lined baking tray.

  5. Repeat until all dough is used up. Place cookies in oven for 8 minutes then remove and allow to cool.

  6. Make icing by adding soy milk and vanilla to the icing sugar. Spoon icing into a piping bag (or just a zip lock with hole cut in it!) and ice cookies.
