Bounty Bites
Bounty Bars have always been a favorite of mine and this version taste so similar to the original it's kinda scary!
I made them into bites coz portion control!
You NEED to make these asap. Just remember to put a tin of coconut milk in the fridge the night before and you're all prepared to make them!
So reminiscent of the original it's kinda scary, but without the refined sugar and palm oil!
Ingredients:
2+1/2 cups dessicated coconut
2 Tbsp coconut butter, warmed
1/2 cup coconut milk (the hard part after being in fridge)
2 Tbsp cacao butter (or coconut oil) melted
1/4 cup maple syrup
1/2 cup dark chocolate chips or chopped chocolate
Directions:
In a slice tin with baking paper and set aside.
In a bowl, combine all ingredients and mix well.
Press into a lined loaf tin, smooth top then transfer to the freezer for 2 hours to set.
Once set, remove and chop into bite sized pieces with a warm knife.
Melt chocolate and then dip/coat your bites with chocolate and place on a lined baking tray.
Transfer tray to fridge to set for 30 minutes.
Keep in fridge for up to a week. These also freeze well. Enjoy!
