Caramelised Apple Skillet Oatmeal
This delicious caramelised skillet apple oatmeal is a combination of classic baked oats and traditional apple crumble. Perfect to eat make and feed to the whole family or to serve and store in individual portions for eating throughout the week.
I enjoyed mine with a dollop of coconut yoghurt; breakfast perfection.
If your fruit bowl is overflowing the feijoas or even if you're lucky enough to have an abundance of stone fruit, this would be glorious with either of those too. Add a handful of berries too if you like!
Ingredients:
1 Tbsp ground flaxseed + 3 Tbsp water
2 cups rolled oats
1/2 tsp baking soda
1 tsp cinnamon
2 cups plant based milk (I used oat, but coconut, rice, or soy would be great)
2 Tbsp maple syrup (or honey)
1 tsp coconut oil
5 medium sized apples, peeled and diced
1 Tbsp coconut sugar
1/4 cup walnuts, chopped
Directions:
Preheat oven to 180 degrees and add ground flaxseed to a bowl with water to thicken.
In a large bowl, add oats, baking soda and cinnamon. Mix together.
Add the milk and maple syrup to the dry ingredients and stir to combine. Set aside.
Heat your skillet and add coconut oil. Place diced apple into skillet and cook until soft (approx 3-4 minutes). Sprinkle fruit with coconut sugar and cook for a further 1 minute to let caramelise.
Pour the oat mixture over the caramalised apples and make sure t's evenly distributed.
Bake for 20 minutes, then sprinkle with walnuts and cook a further 8-10 minutes. You'll know when it's ready when the outside egde is bubbling and the top is firm to touch.
Serve with your favourite milk, yoghurt or even ice cream!
