Chocolate Chickpea Fridge Fudge
Super easy and sooooo delish! Perfect after-dinner treat.
Ingredients:
1 400g can chickpeas, drained
1 cup dates, soaked in hot water for 10 mins
5 Tbsp raw cacao powder
4 Tbsp cashew butter (or peanut butter)
1/4 cup soy milk (or any plant based milk)
1/2 cup choc chips, melted
2 Tbsp hemp seeds, for decoration
Directions:
Line a 20x20cm slice tray with baking paper.
Put chickpeas, dates, cacao powder, cashew butter and soy milk in a blender or food processor and blend until smooth.
Spread into your slice tin and use wet hands to press flat.
Melt chocolate chips/buttons/drops then drizzle over the top and sprinkle with hemp seeds (or nuts) then place in the fridge for 4 hours or overnight.Slice and enjoy!
