Chocolate Chip Cookie Dough Bites
I got the idea if the chickpea brine from a recipe by Deliciously Ella, as she swore it was the magic ingredient that created the cookie dough texture, she was right!
5 ingredients, 5 minutes, happy mouths for the week!
Ingredients:
1 cup dates, soaked in boiling water for 5 minutes
3 Tbsp nut butter (I used cashew, but peanut or almond would be awesome)
2 cups fine rolled oats
1/4 cup dark chocolate chips
1/3 cup chickpea brine (from 1 x 400g tin of chickpeas)
Directions:
Place all the ingredients except chocolate chips in a food processor and blend until well combined.
Remove blade and stir through the chocolate chips.
Roll into balls and store in the fridge for 7 days.
