Peanut Slab
The ultimate piece of kiwiana wouldn't you agree?Gosh I love me a peanut slab! This was my favourite treat as a child growing up so it has some extra special memories.This healthier take on the classic is made with five simple ingredients and tastes SO good. I even surprised myself with how closely it tastes to the original but without the milk powder and preservatives (so great for those who are dairy free).
This is crazy delicious straight from the fridge, but also has a bit of a crunch if you eat it straight from the freezer.
The ultimate piece of kiwiana!
Ingredients:
1/2 cup cacao butter (or coconut oil)
1/2 cup smooth peanut butter
1/2 cup maple syrup
3 Tbsp raw cacao powder
1/2 cup roasted, salted peanuts (+ more for sprinkling over top)
Directions:
Line a small loaf pan (I use 20 x 8cm) with baking paper and set aside.
In a small saucepan over low heat, melt cacao butter, peanut butter and maple syrup until well combined.
Remove from heat and add cacao powder and nuts and stir well (no lumps).
Pour into your prepared loaf tin and then sprinkle the top with peanuts. Transfer to the fridge for 30 minutes to cool.
Slice with a hot knife and enjoy!
Store this slice in the fridge if not eating for best crunch factor. Will last up to 2 weeks and 3 months in freezer.
