Rustic Homemade Baked Beans
Baked beans in NZ are a breakfast staple. If we're honest, I'm sure we'll admit to it sometimes being what is for lunch or dinner too! This brings back memories from my uni days for sure!
Still one of my favourite quick and easy comfort foods, these rustic homemade baked beans up the ante and are super nourishing and satisfying.
Did you know that population studies have shown those who eat beans have a lower risk of bowel cancer? Beans are high in soluble fibre which is amazing for gut health, but many store-bought baked beans are very high in sugar and salt.
These homemade beans are lower in both making them perfect for all ages, even young children. You may want to decrease the spices if you're making them for the kids though. Slightly sweet. Slightly salty. A little bit smokey. You'll never buy store-bought baked beans again!
Why not whip these up for brunch this weekend?
Ingredients:
1 Tbsp olive oil
2 cloves garlic, finely chopped
1/2 tsp smoked paprika
1/4 tsp chipoltle (optional, but I love this flavor)
1 400g can cannellini beans (or white pinto beans)
1 400g can tinned chopped tomatoes
1 Tbsp wholegrain mustard
1 Tbsp maple syrup
1 tsp apple cider vinegar
1/8 tsp sea salt
Directions:
Heat olive oil in a large fry pan and add chopped garlic. Saute for 1 minute.
Add paprika and chipotle and fry for a further minute.
Add tomatoes and bean and cook for 7-8 minutes until the sauce reduces.
Add mustard, maple syrup, vinegar and then season with salt to taste.
Serve with a crusty piece of bread and some wilted greens.
