Tropical fibre balls

 I wanted to make a quick snack that was yummy, perfect for the lunch box, but that was also going to be gut lovin' and nutrient dense.   These bliss balls are just the right amount of sweet, but with so much beneficial fibre in the form of psyllium husk and flaxmeal.  We all know that fibre is essential for optimal gut health, and we can get our fibre from fruit and veggies galore, but why not also get a daily dose from a snack! 

The perfect fibre full bliss ball that packs a nutritional punch!

Ingredients:

  • 100 g dried mango (soaked)

  • 10 dates

  • 1 cup quick cook oats

  • 1/4 cup pumpkin seeds

  • 1/4 cup walnuts

  • 1/3 cup nut butter (peanut, cashew or almond)

  • 1 Tbsp psyllium husk

  • 1 Tbsp flaxmeal (ground flax seed)

  • 1/4 cup desiccated coconut (optional)

Directions:

  1. Place dried mango and dates in a bowl an cover with boiling water. Leave to soak for 10 minutes.

  2. Place all dry ingredients in a food processor and blend until fixture resembles a course flour.

  3. Add soaked dried fruit and nut butter then blend until mixture comes together.

  4. Remove blade and then roll into balls and coat in coconut if desired.

These balls keep really well in the fridge for a week.
