Walnut & Goji Chocolate Rum Truffles

We all love a good rum ball at Christmas time...or heck at any time if I'm honest!

These balls are just perfect to bring along to any Christmas holiday function, but are actually brilliant any time of the year! Make a double batch, they won't last!

I must admit to a failed attempt at these initially, due to not draining the fruit of enough rum! Goodness they were strong! BUT if you're partial to a bit of heavy handed alcohol over Christmas then go right ahead and keep a tablespoon of rum along with your soaked fruit!

Most traditional rum balls are made with biscuits, but these have much more nourishing ingredients, so they won't leave you with the famous Christmas food coma feeling the next day!

I rolled mine in some more cacao powder for an ultimate truffle look, but you can use coconut if you prefer, or skip this step altogether.

Ingredients:

  • 1/2 cup raisins (sulphate free)

  • 1 Tbsp dried goji berries (dried cranberries can work here too)

  • 1/4 cup rum (light rum)

  • 1 cup almond meal

  • 1/4 cup walnuts

  • 3 Tbsp raw cacao powder (plus extra for dusting)

  • 1 Tbsp almond butter (cashew or peanut butter are great in place of almond)

  • 4 Tbsp rice malt syrup or maple syrup

Directions:

  1. In a bowl, place raisins and goji berries, then cover with rum.Leave to absorb the flavor for 30 minutes (an hour is better!).

  2. In a food processor, mix almond meal, walnuts and cacao powder, blitz until walnuts and chopped but chunky (don't over process them to a meal).

  3. After 30 minutes, drain your dried fruit of the excess rum and add to the food processor with dry ingredients.

  4. Add almond butter and maple syrup and then whizz until well combined. I like to ensure there are still small pieces of goji and walnut in mine, so only mix until just combined.

  5. Remove the blade and then use your hands to roll into balls. I made 16 balls, but this will vary depending on how large you like your rum balls!

  6. Lastly (and this is optional), roll in some more cacao powder to coat and then place in the refrigerator for an hour to chill before eating.

Balls will keep well in the fridge for up to 2 weeks, so make a big batch now to last until Christmas.
