Easy Single Serve Oatmeal Pancakes with Stewed Cinnamon Apples

Looking for a nourishing pancake with minimal ingredients and no added sugar? Look no further than these simple single serve oatmeal pancakes.

They're so easy to make it's a bit crazy and you're sure to have all the ingredients in your pantry already.

Delicious right out of the fry pan with banana and nut butter or as shown with stewed apple and cacao nibs. They're also fabulous cold with some nut butter and chia jam.

Feel free to double the mixture if you've got multiple mouths to feed!

Time: 5 mins

Makes: 4 small pancakes

INGREDIENTS:

  • 1 cup oats

  • 1/2 cup plant milk (I used almond milk)

  • 1 medium banana

  • 1 tsp psyllium husk (optional)

  • 1/4 tsp baking soda

  • 1 Tbsp coconut oil

  • 6-8 granny smith apples

  • 1/2 tsp cinnamon

 DIRECTIONS:

  1. Peel, core and dice apples, placing them in an inch of boiling water. Cook for 6-7 minutes until soft. Take off heat and stir through cinnamon. Set aside.

  2. In a food processor, add oats and blend until a fine oat flour is formed.

  3. Add milk, banana, psyllium husk and baking soda and blend until pancake batter forms.

  4. Heat coconut oil in a frying pan (or use non-stick) and add pancake batter to the pan, to the desired size you want (I use a generous tablespoon, which makes 4 small pancakes).

  5. Flip pancake after 2 mins and cook on the other side.

  6. Repeat until all mixture is used up.

  7.  Serve pancakes warm with stewed apple, coconut yoghurt and whatever toppings you'd like. I topped these with hemp seeds, cacao nibs and activated buckwheat.

These are fabulous cold in the lunch box the next day too!
