Lentil & Walnut BBQ Neat Balls
Looking for a nutritious, quick lunch or snack, that will keep well in the fridge and be loved by kids and adults alike?
Stand aside the traditional meatball, hello BBQ 'neat' balls! Protein-packed with lentils and full of healthy omegas in the form of walnuts, these have a delicious texture, that works well with pretty much any flavour combination!
My daughter Hope just loves them and will devour them at all times. They're also great as snack straight from the fridge and work brilliantly in the lunch box too.
Served with a salad for a hearty lunch or dinner, or as an appetiser at a party or summer BBQ this season alongside your favourite dipping sauce, they'll be a hit however they're eaten.
Ingredients:
1 400g tin brown lentils (drained and rinsed)
1/2 cup rolled oats
1/4 cup walnuts
2 cloves garlic
1/2 tsp mixed herbs
2 Tbsp tamari
2 Tbsp barbeque sauce
Directions:
To a food processor, add walnuts and oats and blend until a fine crumble.
Add drained lentils and remaining spices and sauce and blend until combined. The mixture should be sticky ~ if it is still dry in patches, add a tablespoon of water at a time until mixtures comes together.
Remove blade of the processor and roll mixture into balls.
Place balls onto an oven tray lined with baking paper and into the oven at 180 degrees for 22-25 minutes, turning once.
Once cooked, remove from oven and dip in hummus, cashew tzatziki or sweet chilli sauce.
