why you should avoid cassia cinnamon
90-95% of commercially available cinnamon is cassia, meaning most cinnamon you buy at the grocery store is likely cassia due to its lower cost and wider availability compared to "true" Ceylon cinnamon.

Cassia cinnamon contains high levels of coumarin, a natural compound that can be toxic to the liver and kidneys in large amounts. Studies suggest that prolonged consumption eg. every day use (coffee, oatmeal, supplements), of coumarin may lead to liver damage or failure, especially in sensitive individuals. Cassia cinnamon, contains up to 5% coumarin. Ceylon cinnamon ("true cinnamon"), contains only trace amounts.
